Upon discovering that you are vegetarian, many people like to say something like "oh, I could never go vegetarian, I don't know what I'd eat". I've never understood that as an excuse, is it just a lack of creativity? If you're lacking in vegetarian cooking ideas, here is what I cooked for Stephanie the other night. It was both vegan and delicious.

vegetarian fettuccine marinaraThis marinara sauce is easy and delicious. In short you pre-saute some mushrooms and put them aside, then in the same pot heat some oil and nuttelex (vegetable oil based margarine) along with basil, oregano and marjoram. Add tomatoes and a pinch of salt and let it simmer under a medium to low heat with the lid on, stirring occasionally until the tomato is almost broken down. Add in the mushrooms and perhaps some olives and let it simmer until the tomato is completely broken down.

DIY vegan garlic breadI invented this recipe through trial and error. It turns out to be really easy. Add a couple of table spoons of nuttelex, a tablespoon or crushed garlic and some parsley into a small bowl and then mash it together with a fork. Put it in the fridge and leave it for a while (e.g. while you prepare everything else). Get some hamburger buns or similar (here I'm using damper rolls). Liberally spread your garlic/butter mix onto the buns, place them on a tray and then cook them in the oven at 180C for 10-15 minutes. It smells and tastes delicious.

fruit saladEveryone knows how to make a fruit salad, but it really is a tasty and vegan dessert. I made this using mostly in-season fruits (grapes, watermelon, pear, nectarine, kiwi fruit) plus a lucky orange (from Chinese new year) and a banana (just because). Served with lemon sorbet. Also makes a delicious breakfast for a Saturday morning.
